Souper Fast Souper Good Minestrone Soup

Ingredients

1 lb. hamburger

1 package bacon

1 small white onion chopped

1 small zucchini chopped

2 cans bean with bacon soup, undiluted

1 can red kidney beans

2 cans beef consume'

1 can beef broth

1 can Italian style chopped stewed tomatoes

4 Tbsp. sweet basil

1 Bay Leaf

4 Tbsp. Thyme

1/4 Cup red wine (if desired)

2 Cups salad macaroni, dry

Additional beef broth or water if needed

Prep: Cut away most of the fat on the bacon, leaving only meat

In a dutch oven on the stove

Cook bacon until almost crisp, add hamburger and wine and cook until almost all pink is gone, add onion and zucchini and cook until meat is done.

Add bean soup, kidney beans, consume', tomatoes, spices bring to a boil. Add macaroni and bring back to a boil, turn low, cover and cook until macaroni is done to your liking. Add more broth or water if too much liquid is absorbed. Remove Bay leaf and serve. 6 servings
