Yankee Hot Potato Salad:

Approx. 8 potatoes, boiled, peeled, then diced
1 c. chopped pimento-stuffed olives, divided
1/2 lb. bacon, fried and crumbled, divided
1 medium onion, diced
1 c. mayonnaise
2 c. shredded or diced cheese -- cheddar is wonderful, but also may use odds and ends in your refrigerator, including processed cheese

Mix potatoes, onion, half the bacon, half the olives, mayonnaise and cheese in a large bowl. Mound into large casserole dish and top with remaining olives and bacon crumbles. Bake 45 minutes, or until heated through and cheese is melted.
