Maggie's Oatmeal Muffins:

1 c.quick cooking oatmeal
1 c. buttermilk
1 egg
1/2 c. brown sugar
1 c. flour
1/2 t. salt
1/2 t. baking soda
1 1/2 t. baking powder
1/2 c. solid shortening, melted in microwave in a glass measuring cup.

Preheat oven to 400 degrees.
Put oatmeal and buttermilk in a medium sized bowl and cook in microwave on defrost 1 minute, stirring once. Add egg and brown sugar, stir well. Add flour, salt, baking soda, baking powder and melted shortening. Stir just until blended.

Fill greased muffin tins a little over 3/4 full. Bake for about 15 minutes. They should be light-golden colored when done. Turn out of pans onto rack. Eat warm. Serve with butter, jams or jellies if desired. Serve with sliced ham or sausage and fruit.
