Shiitake-Gouda Wrap:

Makes 1-2 wraps

1 Cup Shiitake Mushrooms
1 tsp. olive oil
1/4 cup thinly sliced onions
1/4 Cup white wine
1 clove crushed garlic
peppers
Gouda, sliced thinly
1 large tortilla

Sauté Shiitake mushrooms, onions, peppers, & garlic in olive oil. Add white wine, reduce.

Lay a slice of gouda in the middle of tortilla, pile up with well-drained mushroom filling, being careful to keep filling on cheese, so tortilla does not get soggy. Wrap and cut into 1" slices.
