Shiitake-Gouda Wrap:
Makes 1-2 wraps Sauté Shiitake mushrooms, onions, peppers, & garlic in olive oil. Add white wine, reduce. Lay a slice of gouda in the middle of tortilla, pile up with well-drained mushroom filling, being careful to keep filling on cheese, so tortilla does not get soggy.
