Sausage, Beer and Kraut

Ingredients:

4 sm. tart apples, peeled, seeded, quartered and sliced
1 sm. Red onion, sliced
3 T. butter
¼ t. caraway seeds
Grating (pinch) of nutmeg
Salt to taste, go lightly
1 c. beer
2 T. brown sugar
2 T. stone ground prepared mustard
½ sm. Head cabbage, sliced
8 sausages of choice

Brown apples and onions in butter in a heavy, deep frying pan on medium-high. Approx. 5-7 minutes, stirring occasionally, until apples start to brown. Add caraway, nutmeg, salt, beer, brown sugar, mustard, cabbage and sausages. Cover, reduce heat to medium and cook until cabbage is done, about 15 minutes. Stir half-way through. Remove sausages and keep warm, cook vegetables on high until liquid is mostly evaporated, stirring frequently, about 5-10 minutes. Do not let them stick to the bottom of the pan. Serve with the sausages along with fried potatoes or buttered rye bread.
