Fiery Egg Casserole

1/2 lb. chorizo, uncased and fried until cooked through (see below for homemade chorizo recipe, it is better and possibly more wholesome.)
4 T. butter
2 c. sourdough bread, cubed
1 c. extra-sharp cheddar cheese, shredded
4 eggs
1 c. milk
1/2 t. comino
1 t. oregano
1/2 t. chili powder (to taste)
1/4 t. salt

Preheat oven to 425 degrees.
Melt butter in 1 qt. casserole. Add bread cubes, sprinkle with cheese and toss well.

In a small bowl, beat eggs with milk and seasonings. Stir egg mixture gently with cheese and bread, sprinkle with the chorizo. Bake 20-25 minutes. Let stand 5 minutes before serving. Serves 4. Serve with a platter of sliced melon, jicama and oranges.

Chorizo recipe:

1 lb. lean pork
1 t. salt
2 T. chili powder and/or 2 T. chipotle peppers (how hot do you want it?)
2 cloves garlic, pressed
1/2 t. oregano powder
1/2 t. comino
pinch of allspice and nutmeg
2 T. vinegar

Grind coarsely or chop pork. Add all other ingredients and mix thoroughly. Set in refrigerator over-night. Fry without adding fat for about 30 minutes. Unused chorizo can be frozen.
