Tomato and Shiitake Sauce:
5-6 ripe vine ripe tomatoes Sauté' onion, garlic & Shiitake mushrooms in olive oil over low heat until lightly browned. Add red wine, let reduce about 5 min. Stir in tomato paste. Cook gently for about 5 minutes, salt and pepper to taste. Add fresh tomatoes. Toss over pasta. © California Kitchen & Company 2005 |
