Tomato and Shiitake Sauce:

5-6 ripe vine ripe tomatoes
2 Tbls. olive oil
1 onion
2-3 Shiitake mushrooms
1-2 cloves garlic, crushed
salt and pepper to taste
2 Tbls. Sun dried tomato paste
1/4 Cup red wine

Sauté' onion, garlic & Shiitake mushrooms in olive oil over low heat until lightly browned. Add red wine, let reduce about 5 min.

Stir in tomato paste. Cook gently for about 5 minutes, salt and pepper to taste. Add fresh tomatoes.

Toss over pasta.
