Chicken with Creamy Herb & Oyster Mushroom Sauce:

Serves 4

1 lb Chicken
1 Cup Oyster Mushrooms
3 Tbls. Butter
2 cloves Garlic, crushed
Fresh chopped Basil to taste
salt and pepper to taste
2/3 Cup freshly grated parmesan cheese

Sauté chicken & garlic in butter until chicken is lightly browned. Add Oyster Mushrooms, sauté briefly, and add heavy cream and parmesan. Let thicken. Toss in Basil, salt and pepper to taste.

May be served over pasta, rice or alone.
